This delicate, young, bloomy rind cheese made with ewe’s milk could be eaten with fruit but is wonderful alone. It has the texture of a chévre without the tang. It is incredibly light in texture. You will immediately notice the very white paste, a result of the milk lacking the Beta carotene found in cow’s milk.
Our dairy is NH’s only licensed Grade A sheep dairy … but, we hope not to remain so. We would love to see others become passionate about this wonderful, sweet milk.
